This week, Tara Penny shares one of her go-to mom hacks: a no-fuss snack that comes together in minutes, lives happily in the freezer for up to three months, and actually gets eaten when packed into school lunchboxes.

  • ▪️Desiccated coconut – divided (some for mixing, some for rolling)

  • ▪️Peanut butter – crunchy works beautifully; no added sugar if that’s your preference

How to make Coco Snazzles
  1. ▪️Add around four tablespoons of peanut butter to a bowl. Be generous — this is what binds everything together.

  2. ▪️Mix in the chopped dates and roasted seeds.

  3. ▪️Add about half the desiccated coconut to the mixture, keeping the rest aside for coating.

  4. ▪️Stir well until everything is evenly combined. A little elbow grease helps, but it comes together quickly.

  5. ▪️Roll the mixture into small balls (or bigger ones if you prefer).

  6. ▪️Roll each ball in the remaining coconut to coat.

How to serve (and store)

 

You can eat coco snazzles immediately, but they’re especially good after a stint in the fridge or freezer. In the freezer, they take on a slightly firmer, almost ice-cream-like texture — which makes them feel like a treat rather than a “healthy snack”.
